ScaryMommy.com's Best Chicken Salad In The World

The not-so-scary Jill is the voice behind ScaryMommy.com, a blog about food and Jill's everyday experiences! The name of the blog comes from a phase her son was going through where everything, from grilled cheese to his own Mom, was deemed "scary"! She's here to share her "Best Chicken Salad in the World" recipe with us!

Best Chicken Salad in the World

Ingredients:

Chicken Breasts (6 was used in this recipe)
Orange Marmalade or Apricot Jam (half a jar)
Raisins (about 3/4 cup)
Almonds or Walnuts (about 1/2 cup)
Mayonnaise (As much as suits your palette)
Chives, fresh or dried (a few dashes)
Chopped Apples, Grapes and/or Celery (1/3 cup of each)
Salt & Pepper (to taste)

Preparation:

Cover chicken in jam and bake for approximately 45 minutes at 350 degrees. Cool and transfer to food processor along with the jam that hasn’t liquefied. If you don’t have some sort of processor, finely chop the chicken– that’s the trick. Transfer chicken into a bowl, adding the remaining ingredients, ending with the mayo. Stir until well mixed.

I serve over a bed of greens with a dressing made from canola oil, apple cider vinegar, honey, lemon juice and poppy seeds. Or, throw it on a croissant and pretend you’re picnicking in the south of France.
