Linguine With Tomatoes And Brie Makes 4-6 Servings Ingredients: 4 ripe large tomatoes, cut into 1/2 inch cubes 3/4 lb Brie - remove rind and tear into irregular pieces 1 cup fresh basil leaves cut into strips 2-3 garlic cloves finely minced 3/4 cup olive oil salt and pepper to taste Linguine Freshly grated Parmesan cheese Preparation: 1) Combine tomatoes, brie, basil, garlic, olive oil, salt and pepper in serving bowl. Prepare at least 2 hours before serving and set aside, covered at room temperature 2) Boil 6 quarts of water in a large pot. Add 1 tablespoon of olive oil and 2 teaspoons of salt. Add linguine and boil 8-10 minutes (until tender, but still firm). 3) Drain pasta and immediately toss with the tomato sauce. 4) Serve with grated Parmesan cheese. |
