Grilled Salmon with a Provencal Sauce
Serves 4
Ingredients:
- 4 6oz Salmon Fillets
- 3 tomatoes, peeled, seeded and diced
- 2 shallots, finely minced
- 6 garlic cloves, minced
- 1/3 cup Basil Leaves, shredded
- 1/8 cup Chives, finely minced
- 2 Tablespoons Sherry Wine Vinegar
- salt and pepper to taste
- ¾ cup olive oil
Combine all the ingredients for the sauce in a large bowl except the olive oil. Once ingredients are combined, slowly stir in the olive oil and adjust salt and pepper as needed.
Salt and pepper each side of the Salmon Fillet and then grill on an outdoor grill or indoor grill pan (over medium high heat) for 4-5 minutes on each side or until the fish is flaky. Remove from grill and serve with a spoonful of the Provencal sauce.
