Grilled Salmon with a Provencal Sauce
- 4 6oz Salmon Fillets
- 3 tomatoes, peeled, seeded and diced
- 2 shallots, finely minced
- 6 garlic cloves, minced
- 1/3 cup Basil Leaves, shredded
- 1/8 cup Chives, finely minced
- 2 Tablespoons Sherry Wine Vinegar
- salt and pepper to taste
- ¾ cup olive oil
Combine all the ingredients for the sauce in a large bowl except the olive oil. Once ingredients are combined, slowly stir in the olive oil and adjust salt and pepper as needed.
Salt and pepper each side of the Salmon Fillet and then grill on an outdoor grill or indoor grill pan (over medium high heat) for 4-5 minutes on each side or until the fish is flaky. Remove from grill and serve with a spoonful of the Provencal sauce.
Gaby notes, on this delicious dish: "This recipe was inspired by Chef Cecilia de Castro, my Culinary School Instructor and an amazing chef. After making the Provencal recipe in Culinary class I started using it on numerous types of protein and it is a great combination with fish, chicken and red meats."
