We're proud to feature their Prosciutto Arugula Wraps here today, and even happier to note that the reduction was made on a Frigidaire stove top and the dishes were washed in a Frigidaire dishwasher! Prosciutto Arugula Wraps, by Cooking For Zo Ingredients: Wraps: 3 slices Picante Prosciutto (sliced in half long ways) 1/3 cup Arugula 2 oz Goat cheese 1 tbsp 1 tsp pine nuts 1 tbsp 1/2 tsp chives fresh crack pepper (to taste) Raspberry Vinaigrette Reduction: 1/3 cup balsamic 1/4 cup raspberries (mashed) 1/4 tsp sugar 1/8 tsp black pepper Reduction: Add all ingredients to a small sauce pan and heat over medium heat until reduced by 1/2 and thickened. Wraps: Mix together goat chese, pine nuts, chives and pepper in a small bowl and make into 6 even elongated lumps. Separate the arugula into 6 even bunches. At the end of one of the slices of prosciutto place one of the bunches of arugula and then lay a lump of the cheese mixture. Roll each slice of prosciutto tightly around the filling and place on a tray. Serve with the reduction as a dip or drizzled over the top and enjoy! |
